Eggplant Chips

Eggplant ChipsIngredients:
  • 1 eggplant
  • 2 beaten egg whites
  • vegetable oil
  • oregano
  • mozzarella cheese
  • parmesan cheese
  • ground pepper
  • flour
  • optional: 1 cup chicken breast, cubed
  • optional: 1/2  medium size red pepper, sliced
  • optional: 1/4 cup sliced mushrooms
Peel 1 eggplant, then slice across in 1/4 inch disks. Coat the eggplant with beaten egg whites then roll in flour. Place the chips into a frying pan with a tablespoon of vegetable oil. Fry the chips on both sides until golden brown. Once all the chips have cooked, sprinkle with parmesan cheese, oregano and shredded mozeralla cheese. Cook on low for another 5 minutes until cheese has melted. Place chips onto plates, drizzle some spaghetti sauce on it then sprinkle on some pepper. Serve hot.
 
You can add in a cup of diced chicken breast, 1/2 red pepper sliced and some sliced mushrooms to create a quick dinner your family will love.
